  • 1 Package Perfect Pasta Beef Tortellini
  • 1 1/2 pounds Beef Stew Meat – Cut into 1/2 inch pieces
  • 2 tsp. Kosher Salt
  • 1 tsp. Fresh Cracked Black Pepper
  • 2 tsp. Vegetable Oil
  • 1 1/2 cups Red Wine – Cook’s Choice
  • 1 medium Onion – Diced
  • 1 Tbsp. Garlic – Minced
  • 1 Tbsp. Fresh Thyme – Chopped
  • 24 oz. Beef Broth
  • 1 (20 oz.) jar Marinara Sauce
  • 1 cup Carrots – Peeled and medium diced
  • 2 cups Red Potatoes – Medium Diced
  • Salt and Pepper to Taste
  • Fresh Chopped Parsley and Grated Parmesan to garnish


  • Add oil to a 4-8 quart heavy pot or Dutch oven and place on stove top over medium heat. Season beef with salt and pepper. Add beef to pot and brown on all sides.
  • Add onions, garlic, and thyme to beef and cook for 5-10 minutes, or until onions are lightly browned. Add red wine, and cook until reduced by half, or about 10 minutes.
  • Stir in the beef broth and marinara sauce. Bring to a boil, reduce heat and simmer for 20 minutes. Add carrots and potatoes. Cook until tender.
  • Stir in the Beef Tortellini; simmer an additional 4-6 minutes or until pasta is cooked and tender. Add additional salt and pepper to taste. Top with grated parmesan cheese and freshly chopped parsley to serve.
