  • One Package of Perfect Pasta Classic Cheese Tortellini
  • 1 Ea. English Cucumber, Sliced & Quartered
  • 1/4 Ea. Medium Red Onion, Thinly Sliced
  • 16 Oz. Cherry Tomatoes, Halved
  • 4 Oz. Cooked Bacon, Chopped
  • 1 Can Sliced Black Olives
  • 8 Oz. Fresh Mozzarella, Cut into Bite Size Pieces
  • 1 Pkg. Mini Pepperoni, Chopped
  • 1 Oz. Parmesan Cheese, Shredded
  • 2 Tbsp. Fresh Basil, Chopped
  • 1/2 Cup Extra Virgin Olive Oil
  • 1/4 Cup White Wine Vinegar
  • 1/2 Tsp. Dried Oregano
  • 2 Ea. Garlic Cloves, Minced
  • 1/4 Tsp. Red Pepper Flakes
  • 1/2 Tsp. Kosher Salt
  • 1/4 Tsp. Fresh Ground Black Pepper

  • Heat a medium skillet over medium-high heat and add chopped bacon to skillet. Cook until crispy, remove from heat and set aside. While bacon is cooking, heat a medium pot of water to a gentle boil. Add Tortellini to boiling water and cook for 3 minutes, then remove from water, shock with cold water to stop cooking and then set aside.
  • In a container that can be sealed, combine olive oil, white wine vinegar, dried oregano, minced garlic, red pepper flakes, kosher salt and black pepper. Shake vigorously and set aside.
  • In a large mixing or serving bowl, add tortellini and cover with dressing, mixing gently to coat the pasta. Add cucumber, red onion, cherry tomatoes, bacon, sliced olives, fresh mozzarella, pepperoni, shredded parmesan and fresh basil and then toss gently until all ingredients are incorporated thoroughly. Store in the refrigerator for 30 minutes or longer prior to serving.
