directions

  • Preheat oven to 350 degrees. Spray a 9" x 9" baking dish or a cast iron skillet with a non-stick spray. Set aside.
  • Bring a pot with 6 cups of salted water to a boil and cook gnocchi from frozen for 3 minutes, or until tender. Drain and arrange in a single layer at the bottom of the prepared baking dish.
  • In a saucepan over medium heat, melt the butter. Stir in garlic and cook until lightly golden, for about 1 minute. Whisk in flour until the mixture thickens. Add the milk and whisk until the sauce thickens, about 3 minutes. Whisk in 1 cup of the cheese until smooth. Remove from heat and stir in the sour cream. Season with salt and pepper, to desired taste.
  • Pour sauce over gnocchi in baking dish. Sprinkle remaining cheese, green onions, and bacon over the top of the gnocchi.
  • Bake for 20 minutes, or until sauce is bubbling and the cheese is fully melted. Top with extra sour cream, green onion, and bacon if desired. Serve immediately.
