  • Two (2) 12 OZ Packages of Perfect Pasta Spinach & Cheese Ravioli
  • 1 Cup Cherry Tomatoes, halved
  • 1 Cup Cucumber, Peeled and sliced 1/8″, cut into quarters
  • 1 Cup Red Onion, Sliced & halved
  • 1 Cup Pitted Kalamata Olives, halved
  • 2 cloves Whole Peeled Garlic, minced
  • 1 Tbsp Onion powder
  • 1 Tbsp Dried oregano
  • 3 Tbsp dried parsley
  • 1/4 tsp Black pepper
  • 1/4 tsp Red pepper flakes
  • 1/2 tsp Salt
  • 1 Tbsp Local honey
  • 1/4 Cup Red wine vinegar
  • 1/2 Cup Extra virgin olive oil
  • 1/2 Cup Feta cheese crumbles for garnish
  • 1 Tbsp dried parsley for garnish

directions

  • Boil 6 quarts of water in a large pot. While the water is heating, add cherry tomatoes, cucumber, and Kalamata olives into a large mixing/serving bowl and set aside.
  • Add frozen Spinach & Cheese Ravioli to water, lower heat to a gentle boil, and cook for 5-6 minutes per package directions. While Ravioli is cooking, add minced garlic, onion powder, dried oregano, dried parsley, black pepper, red pepper flakes, salt, local honey, red wine vinegar and extra virgin olive oil to a dressing shaker or container with a lid, and mix well by shaking, then set aside.
  • When ravioli is done cooking, remove from water, drain and shock with cold water to stop the cooking process. Mix drained ravioli with vegetables in the mixing/serving bowl, and pour dressing mixture over the top. Garnish with Feta cheese crumbles and parsley, and set in the refrigerator, covered, for 30 minutes or up to 2 hours.
  • Remove from refrigerator, mix well, and serve!
