Cheese Ravioli in Lemon Basil Butter Sauce
Serves 2-4
Preparation Time: 20 Minutes
Ingredients:
1 package Perfect Pasta Classic Cheese or Four Cheese Ravioli
1 stick Unsalted Butter
1Tbsp. Shallot, minced
1 tsp. Garlic, minced
1 tsp. Lemon zest
2 Tbsp. Fresh lemon juice
2 Tbsp. Fresh basil, chopped
2 tsp. Fresh thyme, chopped
Salt and black pepper, to taste
1/3 cup shredded Parmesan cheese, for garnish
Extra basil for garnish, optional
Directions:
1. Bring a large pot of salted water to a boil. Cook Ravioli for 3-5 minutes or until al-dente. Drain and set aside.
2. While the ravioli is cooking, make the butter sauce. In a small saucepan, melt the butter over medium heat. Add the shallot and garlic and cook until tender, about two minutes. Stir in the lemon zest, lemon juice, basil and thyme. Cook for an additional 2 minutes. Season with salt and pepper, to taste.
3. Pour the ravioli in a serving bowl. Pour lemon basil butter sauce over the ravioli and stir gently to combine. Garnish with Parmesan cheese and extra basil, if desired. Serve immediately.
