  • 1 package Perfect Pasta Cheese Tortellacci
  • ¼ cup Red Wine Vinegar
  • ½ cup Extra Virgin Olive Oil
  • 1 Lemon, Juiced and Zested
  • 2 tsp. Dried Italian Spices
  • 1 Tbsp. Chopped Fresh Parsley
  • 1 cup Diced Fresh Roma Tomatoes
  • 1 cup Diced Cucumbers
  • 2 cups Fresh Arugula
  • ¾ cup Crubled Feta Cheese
  • 1 cup Quartered Radishes
  • Salt and Pepper to Taste


  • Blanch the Perfect Pasta Cheese Tortellacci in boiling salted water for 6 to 7 minutes, strain and cool under cold water, and set aside.
  • In a small bowl, whisk the vinegar, olive oil, lemon juice and zest, spices and season with salt and pepper to taste.
  • In a 12 oz. mason jar, start layering with the tomatoes, and then continue with the cucumbers, arugula, feta, and radishes. Top with the pasta, drizzle with the aromatic vinaigrette
